We had an accident on the way home from the supermarket because eggs aren't as protected in box, and we carry our items in a bag.
How else to save broken eggs except to cook them immediately? There were still leftover grilled peppers and onions in the fridge, so I tossed those in with some American cheese. Its looks pretty tasty. We'll find out tomorrow when I make up a breakfast taco.
As a sidenote, a street vendor talked Clark into buying these peppers. We don't know their name, but another man stopped us shortly after and explained how we should cook them. First, they had to be boiled then sauteed. The gentleman said we should add them to eggs and they would be exquisite. I'm serious! The man was glowing about how delicious eggs and these peppers would be. Clark enjoyed his eggs and peppers but I'm not sure he rate it quite the same.
UPDATE: Although there is a Costan Rican term for these peppers I can't recall the moment, I did discover these are Anaheim peppers. My spanish teacher explained we should stuff the peppers WITH the eggs or with ground meat and rice then roll in egg and saute. I guess we can call this dish stuffed pepper ratatouille. Haha! Nonetheless, the taste wasn't affected.
